Mirin is een veelgebruikte smaakmaker in de Japanse keuken. De stroperige structuur van mirin geeft gerechten een mooie glans en de smaak is zoet, vol en rond, met een tikje umami. Deze populaire smaakmaker wordt ook wel zoete sake genoemd. Goede mirin heeft een alcoholpercentage van rond de 14%. Mirin is een allemansvriendje. De zoetige smaak heeft de prachtige eigenschap om smaken in een gerecht samen te brengen en onaangename vlees- en visgeuren weg te nemen. Een veelgebruikte combinatie voor marinades is mirin, shoyu of tamari, sushi-azijn en sesamolie.
