VINIFICATIE: De druiven worden voorzichtig met de hand geplukt in verschillende fasen om ervoor te zorgen dat alleen rijpe en gezonde bessen in de kelder aankomen. Op het landgoed worden ze zorgvuldig gesorteerd en als hele bessen en trossen in kleine batches gefermenteerd in houten vaten. Malolactische gisting vindt plaats in gebruikte barriques waarin de wijnen 10-15 maanden rijpen.
