Teff is een voedzaam biologisch volkoren meel, geschikt op exotische pannenkoekjes, smaakvolle broodjes of originele ovengerechten mee te bereiden. Amharic teffa - lokale naam voor Teff- word reeds duizenden jaren geteeld op de vruchtbare hoogvlakten in de hoorn van Afrika. In Ethiopië en eritrea gebruikt men de glutenvrije graansoort traditioneel voor 'Injera', een stevige platte koek die in de gehele regio standaard op 't menu staat. De lokale bevolking koesterd de geheimen van dit unieke 'oergraan' maar gelukkig kan men u ook in het westen de bijzondere eigenschappen van Teff toepassen in de keuken.
