Gebruik
Bereiding: te gebruiken vermengd met tarwemeel om het gehalte aan eiwitten te verhogen of om seitan te maken, die dan bereid kan worden als schnitzel, gehakt, in blokjes….
Bereiding van seitan: vermeng de gluten met water, formeer een bol en laat zakken in een groot volume kokend gezouten water met kruiden en kook het gedurende 1 uur. Deze bol zal verdubbelen zelfs misschien verdrievoudigen in volume. Gluten is het eiwitelement in tarwegraan.
Op een droge en koele plaats bewaren en snel verbruiken na opening.
