Tamarinde zijn grote peulen (7-20 cm) van de tropische boom Tamarindus indica. Ze zien er een beetje uit als kale, dikke, bruine, uitgedroogde tuinboonpeulen, gevuld met vruchtvlees waarin ook nog harde zaden zitten. Tamarinde is een belangrijk ingredient in de Oosterse keuken en geeft een fris zuur zoete smaak aan een gerecht. Tamarinde heeft een fris zuur zoete smaak en wordt gebruikt in marinades, sauzen en stoofschotels. Ook wordt het, vaak in combinatie met suiker of een ander zoetmiddel, verwerkt tot zoete drankjes en snoepgoed.
