Pepers, ook wel Spaanse pepers of chilipepers genoemd, zijn familie van de paprika. Het zijn pikante smaakmakers, die niet alleen scherp smaken, maar ook zorgen voor een lekker aroma aan gerechten. De scherpte komt door het stofje capsaïcine dat vooral in de zaadjes maar ook in het vruchtvlees zit. Hoe kleiner de peper, hoe scherper, en hoe rijper, rood of geel, hoe milder de smaak. De meeste bekende zijn de rode en groene Spaanse pepers. De rode is iets zoeter van smaak dan de groene.
