Deze red leicester cheddar is een stevige kaas met licht zoete smaak en een iets korrelige structuur. De kaas heeft 3 tot 4 maanden gerijpt en heeft de bekende oranje cheddarkleur. De familie Alvis, van wie de boerderij slechts een paar kilometer van het dorp Cheddar ligt, maakt al sinds 1952 Cheddar kazen van de hoogste kwaliteit van melk van eigen koeien. Zorg voor de omgeving, de werknemers en opvoeding van schoolkinderen staat centraal in het bedrijf. Deze kaas smaakt heerlijk op een kaasplankje.
