Speaking of Pesto, Liguria immediately comes to mind: it is in this splendid region that, with skilful care, this sauce, which is even said to be an aphrodisiac, is born. Pesto is a cold sauce, synonymous and symbol of Genoa and all of Liguria, which for some decades has been one of the most known and appreciated sauces in the world. The first traces of pesto can be found in the nineteenth century and since then the recipe has always remained the same, at least in home preparation. To make the real Genoese pesto you need a marble mortar and a wooden pestle and ... a lot of patience. Like every traditional recipe, every family has its own recipe for Genoese pesto, the one we propose is that of my mother.

Use
Pan: heat while stirring, do not let it boil. Microwave (800 Watt): place the lid loosely on the container. Heat the sauce for 1.5 minutes, stir briefly and then heat for another minute. Stir the sauce before.
