Deze penne worden gemaakt van de beste Siciliaanse durumtarwe door de familie Barbagallo, waar inmiddels de vierde generatie aan het roer staat. Dankzij de vorm houdt deze pasta smaken goed vast, waardoor ze perfect geschikt zijn voor robuuste sauzen zoals Arrabiata of Bolognese. Durumtarwe wordt in 28 stappen gemalen tot semolina. De semolina wordt binnen 24 uur verwerkt tot pastadeeg, wat vervolgens in bronzen mallen wordt geperst voor een ambachtelijke textuur. Tot slot wordt de penne op lage temperatuur gedroogd voor een optimale smaak en nutriënten. Échte ambachtelijke Italiaanse pasta dus!
