To use Patak's Biryani Spice Paste, follow these steps:
- Heat 4 tablespoons of oil in a frying pan and fry sliced onions until golden brown.
- In the same oil, sauté diced onions for about 5 minutes until they are light golden brown.
- Add 3 tablespoons of Patak's Biryani Spice Paste and a little water to prevent the spices from burning. Stir well for a few minutes until you see oil rising to the surface.
- Add your chosen protein (chicken, lamb, or vegetables) and about 100ml of water. Let the masala cook until the meat is cooked through.
- Prepare basmati rice by soaking it in cold water for 20-25 minutes, then boiling it with spices like cinnamon, bay leaves, and cardamom.
- Layer the cooked rice and meat mixture in an ovenproof dish, sprinkling with chopped coriander between layers.
- Seal the dish tightly with foil and a lid and bake in the oven for 10 minutes.
- Garnish with fried onions and serve.
