Pastrami is een delicatesse die vroeger al van gans werd gemaakt. De ganzen die gebruikt worden voor deze pastrami van Wild van Wild worden geschoten in Noord-Holland. De duurzame jacht heeft tot doel om het natuurlijke evenwicht in stand wordt gehouden. Na het plukken worden de filets eerst gepekeld en in de zelfgemaakte pekel.
