2015. Behalve z'n Saint-Véran maakt Olivier Merlin in het aangrenzende Pouilly-Fuissé een pareltje. Rijk en zeer aromatisch, met nuances van witte perzik en Williams peer. Op de tong fris en zuiver, soepel en fruitig, rond en gul, met een werkelijk prachtig zuivere mineraliteit in de lange afdronk. Een wijn met karakter! Heerlijk patés of terrines. Maar probeer 'm ook eens bij gestoomde krab, langoustines of gamba's!smaakimpressie
Prachtige licht groengouden kleur. Fris en zeer aromatisch, met nuances van witte perzik en Williams peer. Op de tong fris en zuiver, soepel en fruitig, rond en gul, met opvallend zuivere mineraliteit in de lange finale.vinificatie
De druiven van elk perceel worden afzonderlijk geoogst, geperst en gevinifieerd. Na een lichte natuurlijke bezinking vinden de alcoholische en malolactische gisting plaats in eikenhouten vaten (1/4 nieuw, 3/4 1, 2, 3 jaar oud). Daarin wordt de jonge wijn 10 maanden op ‘lies’ (eigen fijn bezinksel) opgevoed met regelmatige ‘bâtonnage’ (om- en doorroeren van het bezinksel voor meer vet, mineraliteit en complexiteit). De wijn is op deze manier volledig stabiel van structuur en kan ongeklaard worden gebotteld na een lichte filtratie op fijne kiezelaarde (kieselguhr). ‹›Related Products
