Hiziki (hijikia fusiforme) is een zeegras dat op rotsige landtongen en uitlopers van de kust van de Stille Zuidzee op een tot twee meter diepte groeit, daar het een flinke hoeveelheid zonlicht nodig heeft. Na een jaar wordt hiziki in het voorjaar met de hand geoogst, uitgezocht, in de zon gedroogd, meerdere uren gestoomd en wederom in de zon gedroogd.
,Me-hiziki zijn de worteltjes van de hizikiplant. Door hun fijne structuur zijn ze zachter en zeer geschikt voor delicate gerechten en delicate gourmets.
