Witte nougat is, net als zwarte nougat, een essentieel product van de Provençaalse traditie van 13 desserts. De witte nougat van Jonquier is lang in de mond met de lavendelhoning die na de smaak van de amandelen komt. In de zwarte nougat smelt de honing subtiel waarna de smaak en knapperigheid van de geroosterde amandelen overheersen, waardoor een aangenaam zoet gevoel ontstaat. Met 40% amandelen in de witte noga en 60% amandelen in de zwarte noga is Jonquier nougat een suikergoed met een laag suikergehalte
