Bonen zijn zaden van een plantphaseolus, oorspronkelijk uit Centraal en Zuid Amerika.Bonen werden 7000 jaar geleden door Indiase stammen in Mexico en peru gecultiveerd. In Europa werd de plant eerst geteeld voor het zaad en pas in de 19e eeuw werden ze in Italië gegeten als verse groente Bonen worden vaak gedroogd en kunnen dan lang bewaard worden. Gedroogde bonen moeten voor gebruik 8-12 uur geweekt worden en daarna ongeveer 1 uur in het weekwater worden gekookt. De kooktijd is afhankelijk van hoe oud de bonen zijn. Voeg het zout pas toe tegen het einde van de kooktijd, anders worden ze niet gaar. Vermijd het drinken van thee waardoor de opname van ijzer verstoord wordt.
