Deze gerookte zalm is afkomstig van Zalmhuis Steur, bekend om zijn topkwaliteit MSC-gecertificeerde zalm uit duurzame visserij. De specialisten fileren de zalm zelf om deze vervolgens op klassieke wijze 12 uur droog te zouten. Voor een ambachtelijke gerookte zalm wordt de vis afgespoeld en gaat voor 8 tot 15 uur de rooktunnel in, bij lage temperatuur. De controle en het inpakken gaan met de hand. Hierdoor ontstaat de beste gerookte zalm.
