Wortelen zorgen voor luchtige en rulle biodynamische akkers. Boven de grond neemt het wortelloof stikstof op; onmisbaar voor een voedingsbodem rijk aan micro-organismen. Daar profiteert het gewas zelf als eerste van; het gezonde bodemleven houdt de wortelen gaaf en verdiept de smaak. Doperwten komen in de biodynamische teeltcyclus na de wortelen waarvan het voedingsrijke loof in de grond achterblijft als extra groenbemesting. Daar gedijen de erwten weer op. Zo heeft ieder gewas een functie binnen de wisselteelt. Zowel de wortelen als doperwten komen van Nederlandse bodem.
