Dehydrated sourdough starter to make your own sourdough bread!

Dehydrated sourdough starter is a preserved form of sourdough culture, created by drying an active sourdough starter. This process removes moisture, making it shelf-stable and convenient for long-term storage or shipping. When rehydrated, the starter can be revived and used for baking delicious sourdough bread with its characteristic tangy flavour and airy crumb.

This dehydrated sourdough starter is based on wholewheat flour.

How to Use

Materials Needed

  • Dehydrated starter: 15-20 grams
  • Whole wheat flour: 15 grams
  • Unchlorinated water (bottled or filtered) :30 grams
  • Clean glass jar or container
  • Spoon or chopstick

Day 1: Feeding the Starter

  1. Add Flour & Water : Add 15 grams of whole wheat flour (any good quality flour will work, but the whole wheat works best in my experience) and 30 grams of water to the starter
  2. Mix Well: Stir until the mixture is smooth and there are no dry pockets of flour
  3. Rest Overnight: Cover loosely and let it sit at room temperature for 12- 24 hours

Day 2: Checking & Feeding the Starter

  1. Inspect the Starter: After 12-24 hours, check for signs of bubbles or a slightly tangy smell. This indicates that the starter is beginning to come to life. Depending on the flour and temperature, you may see some activity, but more likely than not, there won’t be any activity yet
  2. Add Flour & Water : Keep 15 grams of the Day 1 mixture, add 15 grams of whole wheat flour (or same as the one from the previous day) and 30 grams of water
  3. Mix Well: Stir until the mixture is smooth and there are no dry pockets of flour
  4. Rest Overnight: Cover loosely and let it sit at room temperature for 24 hours

Day 3: Checking & Feeding the Starter

  1. Inspect the Starter: After 12-24 hours, check for signs of bubbles or a slightly tangy smell. This indicates that the starter is beginning to come to life. You should start seeing some activity
  2. Repeat the steps from Day 2
  3. By the afternoon of Day 3, the starter should have doubled
