Deze Brouilly is zeer fruitig, maar heeft nog meer dan genoeg structuur. Een zeer slanke en fijne wijn, afkomstig van 1 hectare wijngaard.smaakimpressie
Helder, diep robijnrood van kleur. In de neus aroma’s van rijpe frambozen, kersen, vlierbessen en een hint van wilde oregano. In het smaakpalet tonen van bessen, rijpe pruimen en heel licht wat specerijen, die gepaard gaan met soepele tannines in de afdronk.vinificatie
Na een strenge en selectieve handmatige oogst worden de trossen grotendeels intact gelaten. Men laat deze ongekneusd en temperatuurgecontroleerd de alcoholische fermentatie (‘semi-carbonique’) met wilde (druifeigen) gisten ondergaan op betonnen cuves, zonder toevoeging van zwavel. Na 12 dagen volgt de persing en wordt de jonge wijn overgestoken op oude eikenhouten foeders, waarin de malolactische gisting en de rijping plaatsvinden. Na een periode van ongeveer 6 maanden wordt de wijn geassembleerd en ongefilterd gebotteld. ‹›Related Products
