Gonzalez Byass bezit wijngaarden in de beste delen van Jerez, de zogenaamde Jerez Superior. De Palomino fino groeit op de hoger gelegen delen van de helling. De kalkrijke bodem wordt albariza genoemd.

Deze Del Duque Amontillado is gemaakt van de palomino fino-druif. De goudbruine wijn is gemaakt van sherry's die 30 jaar oud zijn. De wijn is milddroog, vol en krachtig. Hij heeft aroma's van noten, tonen van gedroogde dadels en vijgen en een kruidige, milde afdronk. Deze complexe wijn kan zowel als aperitief, aan tafel en als digestief worden geserveerd.
Paté op salade, herfstsalade met spekjes, noten en gerookte gevogelte, paddestoelsalade, Ibericoham, oosters getinte gerechten als roerbak rundvlees met shiitake en sojasaus, gebakken tempé, oudbelegen kaas, pittige paddestoelsoep, amuse van verse pasta met verse truffel, pasteitje met haasragout.
