Een amberkleurige wijn uit Jerez die wat stijl betreft tussen een amontillado en oloroso in zit. Hij heeft het droge en het vleugje flor van de amontillado en de rondeur van een oloroso. De Apostoles is een complexe, rijke palo cortado met een leeftijd van gemiddeld 30 jaar. In de geur en smaak komen aroma's van blanke (hazel)noten en walnoten voor. De wijn is mineralig en kruidig en heeft een intense, lange afdronk. Als aperitief en als kaaswijn.
Combineert goed met Paté op toast, salade met gebakken (shiitake)paddestoelen en croûtons, gebakken gevogelte, notensoep, pompoensoep met oosterse specerijen, quiche met blauwschimmelkaas, gedroogde ham, pasteitje met wild- of paddestoelragout, belegen kaas, blauwaderkaas. Ook een aanrader bij delicate Japanse en Vietnamese gerechten.
