Citroen is een van oorsprong Indische citrusvrucht. Zoals bij de meeste citrusvruchten bevat de schil etherische oliën, veel vitaminen en mineralen. Omwille van het aroma wordt citroenschil soms geraspt. Citroenen hoeven er niet knalgeel uitzien om als 'rijp' te kunnen doorgaan. Ze zien er alleen geel uit als ze koude nachten hebben doorgemaakt. Het vruchtvlees van citroen is zeer sappig en zuur. Behalve citroenzuur (een veelgebruikt bewaarmiddel) bevat het ook grote hoeveelheden vitamine C.
