Cavolo nero is zwarte kool die oorspronkelijk uit Toscane komt. Omdat het een wintervaste kool is, is palmkool te koop van het vroege begin van de herfst tot ver in de lente. Cavolo nero is rauw te eten, maar ook roerbakken of vijf minuten blancheren is een smakelijke optie. Joep van de Bool (van de Waog) teelt deze voor ons, op Limburgse volle grond.
