Purato is een duurzaam project van Santa Tresa. De wijnen gaan veel verder dan biologisch alleen. Zo is de fles gemaakt van gerecycled glas, worden de labels en omdozen gemaakt van verantwoorde 'papierbronnen' en is de inkt biologisch afbreekbaar. Last but not least is de wijn CO2 neutraal gemaakt, wat inhoudt dat de Purato wijnen de CO2 van wijngaard tot aan in de winkel compenseerd. De appassimento wordt gemaakt van de Nero dAvola en Syrah, waarbij de druiven worden gedroogd aan wijnstokken en op matten. Om de wijn nog meer body te geven ondergaat de wijn een houtrijping. Het resultaat: een krachtige maar zachte wijn met tonen van gedroogd donker fruit en kruiden. Lekker bij gegrild vlees of stevige pastas
