De smaak van deze jonge miso is licht en mild. Deze miso wordt volgens een ander proces vervaardigd dan de andere miso-soorten: men gebruikt rijst, koji (een fermentatie-starter), sojabonen, rijst en zeezout. Omdat de bereiding aanzienlijk meer koji bevat en minder zout, bedraagt de natuurlijke fermentatietijd slechts 2 - 8 weken. Na deze periode is de miso volledig gerijpt. Gebruik de miso in de soep of ter verfijning van gerechten die anders met room of melkproducten bereid worden.
